Looking for a something to not just fill you up but warm you up this winter? Try this unique spin on the traditional chili.

It is lighter and easier to digest without the kidney beans or white beans that a traditional Chili contains, and the hint of curry adds a nice twist.

Our favorite part of this recipe is the collagen packed bone broth base. It provides you a healthy dose of the amino acids Proline, Glycine, and Glutamine. Along with minerals and cell regeneration, these proteins help to keep junctions in our skin tight, preventing premature aging and wrinkles. They also strengthen the tight junctions in our gut, preventing gas, bloating and inflammation.

This is why bone broth is one of the top foods recommended by health care practitioners when trying to heal intestinal permeability (aka leaky gut). Other foods that help with this are cultured vegetables, kefir, probiotics, fiber and coconut oil!

If you prefer to use a vegetarian based stock then all the power to you! But be sure to throw in some sea vegetables like kombu or dulse flakes to boost the mineral content.

If you are feeling adventurous, and want to make your own bone broth here is our rough guide on how to do it:

1: Throw some bones in a big pot on the stove.

2: Add a splash of unpastuerized apple cider vinegar.

3: Sprinkle with himalayan sea salt (start with 2 tsp then add to taste).

4: Throw in some veggies!  Carrots, onion and celery are our favorites.

5: Bring it to a boil and then simmer it on low and slow and watch the heat do its trick.

6: Remember, patience is key!  The longer you simmer the better it will be. (Between 6 – 48 hours is ideal).

Have fun with the process.  It’s like a cool science experiment at home. The neighbors will be wondering why your windows keep steaming up.

The final product will become gelatinous as it cools. This is good, it means all the collagen and other proteins and minerals were fully extracted.

CHILI BLACK BEAN SOUP

Ingredients:

1 can organic black beans, rinsed
1 large carrot, diced
1 can baby corn or 1 cup frozen corn (organic if possible)
1/2 purple onion, sliced thin
2 cloves garlic, sliced thin
2 tsp fresh grated Ginger
1/2 cup sundried tomatoes, sliced thin
1 tbsp chili powder
1 tsp crushed chili’s
1 tsp curry powder
1 tsp himalayan sea salt
1 tbsp coconut oil
1 bag organic beef bone broth or 750ml vegetarian broth of choice

Method:

Melt coconut oil in a large pot and sauté onions until soft. Add carrots, curry, chili, crushed chili’s, and sea salt. Sauté 2 minutes to release flavor from the spices. Add garlic and ginger and sauté another minute. Add black beans, sundried tomatoes, corn and bone broth. Bring to a boil, then reduce heat and simmer for 15-20 minutes before serving.
