As the weather gets cooler you may find yourself craving meals that are warmer and heartier than usual.  This is a completely natural process. Unfortunately we sometimes find it easy to turn to those dangerous comfort foods … ultimately resulting in the dreaded ‘winter weight’ (along with a lethargic, lazy feeling). But don’t worry!

Here is a delicious fall recipe that will increase your internal temperature and leave you feeling warm, energetic and most importantly … HAPPY!

This vegan, whole-food curry is sure to satisfy the whole family … and the natural spices will help your body stay healthy as we move into the cooler fall and winter months. This recipe really is a fridge-cleaner .. so feel free to add any vegetables you have already (or omit any from the list that aren’t easily accessible to you).

Ingredients

  • 1/4 cup Sweet Onion, diced
  • 1/4 cup Shiitake Mushrooms, chopped
  • 1/2 Red Pepper, cut into strips
  • 1/2 cup Green Beans, chopped into 2″ pieces
  • 1 cup Broccoli Florets, chopped
  • 1/4 cup Butternut or Acorn Squash (fresh or frozen) (opt.)
  • 1/4 cup Peas (fresh or frozen) (opt.)
  • 1/4 cup biodynamic/organic Sweet Corn (fresh or frozen) (opt.)
  • 2 cups Coconut Milk
  • 1″ piece Red Thai Chilli Pepper, minced
  • 1/4 tsp Cayenne Pepper
  • 1/4 tsp Turmeric Powder
  • 1 Tbsp Curry Powder
  • 1 clove Fresh Garlic, minced
  • 2 tsp Unrefined Salt (or more to taste)

Process

  • In oiled pot, cook together the onion, mushrooms, Thai chilli pepper, garlic & salt
  • Add all other vegetable ingredients, stirring occasionally
  • Add all spices to pot and mix well
  • Add coconut milk and simmer on low/medium heat for 15 – 20 minutes
  • Enjoy!
